Keto Mac and Cheese Recipe / A scrumptious meal

It’s the really easy cauliflower mac and cheese casserole. It just takes about 30 minutes to prepare and it’s just delicious.

Cauliflower is neither macaroni, nor potatoes, nor rice, but it is a really good substitute for all those things. Cauliflower Mac and Cheese is rich and creamy comfort food without any added carbohydrates. It can be served as a main dish, or with roast chicken.

Required Ingredients – Keto Mac and Cheese

The following ingredients are enough to feed 6 people.

  • Cauliflower (large)- 1 head
  • Butter- 4 tbsp.
  • Heavy Whipping Cream- 4 tbsp.
  • Oregano- 1/2 tsp.
  • Ground Basil- 1/2 tsp.
  • Black Pepper and salt- as per taste
  • Shredded Cheddar Cheese- 1 cup
  • Shredded Mozzarella Cheese- 1 cup
  • Parsley- 4 tbsp.

Instructions – Keto Mac and Cheese

  1. Preheat the oven to 400°F.
  2. First, break up a head of cauliflower into florets and add those to boiling water cover and cook for about 8 to 10 minutes or until tender crisp.
  3. When done, Drain cauliflower in a colander and set aside.
  4. Add milk (or cream) and softened cream cheese into a saucepan and gently whisk till the cream cheese is completely melted.
  5. Pour in heavy cream and sprinkle with oregano, basil, pepper, garlic powder, chili powder, dried herbs and salt.
  6. Add shredded mozzarella and half of the shredded cheddar.
  7. Mix well and continue to cook till the cheese is completely melted.
  8. Once the sauce is smooth, stir in the drained cauliflower.
  9. Gently stir around so that the cauliflower is covered with the cheese sauce.
  10. Transfer the mixture to a 9×13 baking dish and top with the remaining cheddar.
  11. Bake it uncovered, for about 18 to 20 minutes or until hot and bubbly.
  12. While that bakes, dice up few slices of bacon and fry until it’s crispy.
  13. Remove casserole from oven, top with prepared bacon, and serve. 
  14. Finally, garnish it with chopped parsley.
